Yea right. I checked the four goats I had been milking and they all had really full udders. Okay, I said to them, let’s get you milked. These four are not going to dry up easily. I am feeding them just oats and barley on the milk stand. Except for what they steal from Gwen on their way down to the back pasture, they are getting no alfalfa hay. Why are they still giving so much milk? There must be something out in that back pasture that they are eating.
Be careful what you wish for.
I took another rabbit out of the freezer last night and when I got home tonight I cut it into eight pieces and it’s now marinating in barbeque sauce; we’ll put it on the grill tomorrow night. I’m going to make some sweet potato salad from my Thrill of the Grill cookbook to go with it. Recipe as follows:
Sweet Potato Salad
From: The Thrill of the Grill
4 medium sweet potatoes (about 2 pounds cut into uniform large pieces
1/2 red bell pepper, seeded and diced small
1/2 green bell pepper, seeded and diced small
1/2 large red onion, diced small
4 T finely chopped parsley
For the dressing
3 T Dijon mustard
3 T ketchup
1 t minced garlic
3/4 c olive oil
4 T cider vinegar
1 T Worcestershire sauce
2 T lime juice
Salt and pepper to taste
Bring salted water to boil and boil sweet potatoes 10-12 min. You should be able to pierce them with a fork, but still feel some resistance and they shouldn’t fall apart. Don’t over cook!
Prepare ice water bath in your sink for potatoes.
When potatoes are done, drain in a colander and plunge into ice bath. Then drain well.
Add peppers, onion and parsley.
Make dressing by combining mustard, ketchup and garlic. Whisk in olive oil. Add vinegar, Worcestershire and lime juice, salt and pepper.
Pour dressing over potatoes and serve or refrigerate.
We’ve got a big box of sweet potatoes that we bought from a local farmer and they are wonderful. We’ve been eating them several days a week. I found a recipe for sweet potato biscuits that I want to make as well. I did not make the cornbread yesterday because I didn’t have enough flour. I rectified that and will make some soon.
