I am a fan of the Slow Food Ark of Taste. The rabbits that we raise, Silver Fox, are listed with the Slow Food Ark of Taste. I plan this year to plant a number of the plants listed with the Slow Food Ark of Taste as having exceptional taste … as long as they are from southern origin. I am not going to choose a plant that has its roots in the northern states because it may not do well here. White Velvet Okra is one of them. I am not a big fan of okra, but given that I want to explore southern heritage food, I am going to have to learn to cook with it and like it.
I found an amazing recipe for rabbit in one of my cook books that I am going to try as soon as I can pick up a clay roasting pan (or figure out if it will work in something else). It involves marinating the rabbit in a marinade of balsamic vinegar, mustard, peppercorns and juniper berries and then rubbing it with rosemary-infused butter and then wrapping the pieces of rabbit in Prosciutto. Sounds wonderful, huh?
As I write this, it is raining, hard. I am glad that I do not have to go out and do chores in the dark and the rain, at least for a little while.
I am worried about finances. I am worried about my future. I hope everything works out okay.
