WOW …

Here it is just 7:00 AM, all the chores are done, I am showered and dressed, all my bags and school stuff are in the hallway ready to load into the truck and I do not have to leave until 7:30 or so!

Today is my first full day of school.  I was dreading having to hit the ground running to get all of the chores done before heading out, but now that we have WAY fewer rabbits and just one cow to milk, it is a lot easier to get the chores done.

I put the last batch of processed rabbits in the freezer yesterday, 24 of them.  I reserved one for our dinner.  I will admit that I was a bit worried that it was going to be a flop, but nope, probably one of the best and simplest rabbit dishes I’ve ever made!

If only people would give rabbit a try and take care to cook it.  Then they’d realize that it is far superior to chicken.  Just two pieces and some pasta and I was full!  Wally had three pieces and he was full.  Full, but not uncomfortably so and we both slept well.  We have enough rabbit for another meal; pasta for another two or three meals.

Pretty much anything you can do with chicken, you can do with rabbit as long as there is plenty of moisture in the dish itself to keep the rabbit from drying out. For example, you cannot roast a rabbit like you do a chicken unless you baste it — A LOT.  The dish I made last night was similar to the one that called for cooking the rabbit in a terra-cotta baking dish.  I used my cast iron pan, which I covered with a cast iron lid.  I will now try that recipe in my cast iron pan and see how it goes.  Maybe on Thursday …

We went to pick up a large bale of hay on Sunday and we had to pick it up down below where we used to live.  This was the first time I’ve been down there since we’ve moved.  It was bittersweet.  The land and house looked dead and abandoned with nothing there.  It was sad; I was glad to get back home here.  The hay was VERY expensive.  The most we’ve ever paid for hay.  Unfortunately we have no choice.  We need to continue to feed nutritious hay to the cows, rabbits and pigs to keep them in good condition throughout the winter.

At least it is going to be warmer for the upcoming week.  Rainy, but warmer, except for Wednesday when they are forecasting AM ice.  Lovely …

I guess I had better get going.  It will not hurt to get on the road a bit earlier.
